Tasting Note: Noe PX by Gonzalez Byass, 30yo Pedro Ximenez
Pedro Ximenez sherry is one of my favourite things. Forget the Harvey’s Bristol Cream that your gran drinks, there are so many different styles of sherry and Pedro Ximinez is the sweetest, most indulgent of them all.
The dense aromas displayed on the nose are of dried fruits, including figs, raisins and sultanas, with the slightest whiff of coffee, almonds and cherries hiding underneath. On the palate is a rich sweetness balanced out by the surprisingly fresh acidity of dried cranberry flavours, following on to more sultanas and figs, with a gorgeously nutty finish.
Rich, complex and great on its own or over really good vanilla ice cream.
